2/3 cup coconut oil melted
handful of spinach
1 tsp salt
½ cup chocolate melted
heaped tablespoon of cacao powder
frozen strawberries (as many as you like)
If you are student or on a tight budget like me, always check out the reduced section in a supermarket especially for fruit and vegetables. Also, we all know how hard it is to get an avocado at the right ripeness, so usually in the reduced section they are perfectly ripe and great to use that day!
1. Remove avocado skin, if you get the avocado at the right ripeness you can peel the avocado and not waste any of it. I put this in the food processor and blended it till it was smooth. Whilst blending I added a few leaves of spinach.
2. Split the banana in your hands and add to the avocado mixture, pulse the mixture till banana is combined. Then sprinkle the salt and add the coconut oil after you have melted it on the hob or microwave. Mix it together for about a minute constant.
3. Line a square baking dish with non-stick paper depending on how large your baking dish will create thinner/thicker fudge squares. Whilst waiting for the mixture to fully cool from the coconut oil being a warm melted liquid. Once it is fully cool add it to the baking tray, making sure it’s the same width throughout the fudge. Then pop in the frozen strawberries in facing downwards in the fudge. Yum! I added the strawberries because once you have put the melted chocolate on later the combo of the strawberry, chocolate and fudge is divine!
4. Leave in fridge for 3 hours to freeze and cut into slices. Then you can spread melted chocolate on top and have a munch! I would say let the frozen fudge thaw slightly before eating ,especially if you have sensitive teeth.Then Give it to friends and family and they will never know its vegan.
